5 Minutes Pineapple and Chocolate Chips Cake

It is not common that you hear of a pineapple cake with chocolate chips, isn’t it? Well, this cake is not only delicious but it’s also very easy to prepare. For this cake, we are using pineapple chunks from canned pineapples.

The 5 minutes refers to the mixing time of the cake.

Ingredients

  • 200 grams butter
  • 160 grams of castor sugar
  • 4 eggs
  • 50 ml pineapple syrup (juice from the can)
  • 250 grams of self-raising flour
  • ⅛ teaspoon salt
  • ¼ teaspoon baking powder
  • 150 grams chopped pineapples (1 cm in size)
  • 1 teaspoon vanilla essence
  • 3 tablespoons chocolate chips

Method

  1. Take 150 grams of pineapple chunks and chop them into 1cm cubes. Leave aside.
  2. Now take a bowl, put in butter and sugar and cream it with an electric beater for 2 minutes on medium speed.
  3. When you see the mixture is light and creamy in colour, then put in 1 egg at a time and continue beating till you finish all 4 eggs.
  4. Now add in vanilla essence and pineapple syrup.
  5. Add baking powder and salt to the self-raising flour. Fold in the flour 1 ladle at a time gradually until you finish it all. Use a spatula for this process.
  6. Put in the chopped pineapple and chocolate chips. Mix well.
  7. Use a square 7 or 8-inch baking tin and grease it with some butter. Now put a baking sheet on it.
  8. Pour the cake mixture into the cake tin. Bake at 160 degrees celsius for 30 to 35 minutes depending on your oven.
  9. Test your cake with a skewer, if it comes out clean, that means it is ready. Done!

Final thoughts

  1. Use an electric beater at speed 3 to cream your butter, sugar and eggs.
  2. You may top it up with some more pineapple pieces on the cake before baking.
  3. Tap your cake tin 3 to 5 times before putting it in the oven. This helps to release any air bubbles that are trapped in the batter.
  4. Remember to slice your cake only when it is at room temperature.
