2 Simple and Tasty Rice Recipes

Are you absolutely tired of eating white rice everyday?  Why not try 2 types of flavourful rice with your normal meals. These 2 recipes are simple and yet very delicious. The 1st one is Tomato Rice and the 2nd one is Cumin Rice.

Recipe No 1 – Tomato Rice (This recipe serves 4 persons)

Ingredients

3 pips garlic

1 thumb size ginger

1 medium onion

¼ cup water for grinding the above

4 tablespoon tomato puree

1 pandan leaf

2 cardamoms

2 cinnamon sticks

2 cloves

2 drops of orange red colour

2 cups basmati rice (soak for 30 minutes) & 4 cups of water

2 teaspoon salt

4 tablespoon oil

Method

1. In a blender grind garlic, ginger & onion with ¼ cup of water.  After grinding, put aside.

2. Now take a pan, heat up 4 tablespoon of oil, add pandan leaf, cardamoms, cinnamon stick and clove. Saute for 15 to 20 seconds. 

3. Add the grinded ingredients and cook for 1 to 2 minutes on a slow flame.

4. Take your rice cooker pot and pour the above mixture into it.  Add tomato puree, rice, water, salt and lastly 2 drops of orange red colour.(You may use a pinch of tandoori colour as an option)

5. Mix all the ingredients and press the ‘start’ cooking button. The rice will take about 20 minutes to cook.

6. Do not open the cover of the rice cooker immediately. Let the rice settle for at least 20 minutes before serving. Enjoy your Tomato Rice!

Recipe No 2 – Cumin Rice (This recipe serves 4 persons)

Ingredients

3 pips garlic

1 thumb size ginger

1 medium onion

¼ cup water for grinding the above

1 teaspoon cumin seeds

2 bayleaves

2 cardamoms

2 cinnamon sticks

2 cloves

2 teaspoon cumin powder

1 teaspoon garam masala powder

2 cups basmati rice (soak for 30 minutes) & 4 cups of water

2 teaspoon salt

4 tablespoon oil

Method

1. In a blender grind garlic, ginger & onion with ¼ cup of water. After grinding, put aside.

2. Now take a pan, heat up 4 tablespoon of oil, add  bay leaves, cardamoms, cinnamon sticks and clove. Saute for 15 to 20 seconds. 

3. Add the grinded ingredients, cumin powder, garam masala and cook for 1 to 2 minutes on a slow flame. Once some oil floats up, then switch off the fire.

4.  In your rice cooker pot pour the above mixture into it.  Add rice, water and salt.

5. Mix all the ingredients and press the ‘start’ cooking button. The rice will take about 20 minutes to cook.

6. Do not open the cover of the rice cooker immediately. Let the rice settle for at least 20 minutes before serving. Enjoy your Cumin Rice!

Final thoughts

Do not forget to soak your basmati rice for at least 25 to 30 minutes. If you wash and cook it immediately, the rice would not puff up, and the grains would not look nice.

If you wish to use normal rice, you may do so for these recipes. The ratio for normal rice to water is 1 cup rice to 1.5 cups water.

Tomato and Cumin Rice can be eaten with curries, chicken gravies, kurmas and also dals. The above rice is also suitable for vegetarians.

You may add 1 tablespoon of fried split cashew nuts for both recipes just before serving!
