
When you hear the word ‘Banana Cake’, what comes to your mind? Banana Cakes or banana bread have been a favourite among the elderly, adults, teenagers and children all the time.
Bananas are a good source of potassium, fibre, Vitamin C and Vitamin B6. Some of the benefits of eating bananas are that it can lower blood pressure and you can benefit from heart health too.
What I love about Banana Cakes is the strong smell of their banana essence. Today I am going to share with you a simple and delicious banana cake recipe. You don’t need to be skilful, all you need to do is to follow the recipe correctly.
Soft and Fluffy Banana Cake Recipe

Ingredients
- 200 grams butter
- 200 grams castor sugar
- 4 eggs
- 300 grams self-raising flour
- 1 teaspoon mixed spice
- A pinch of soda bicarbonate
- 3 tablespoons milk
- 10 bananas (preferable pisang emas)
- 1 teaspoon vanilla essence
- 1 teaspoon banana essence
- 2 tablespoon chopped walnuts (optional)
Method
- In a bowl cream butter and sugar first with an electric beater for a minimum of 3 minutes on medium speed, which is at number 3 until it becomes creamy and light.
- Once you see the mixture is light and creamy in colour, then put in 1 egg at a time and continue beating it until you finish all 4 eggs.
- Now add in both vanilla and banana essence.
- Meanwhile, peel the bananas and mash them. Add the bananas to the cake mixture.
- Do sieve the self-raising flour with a pinch of baking soda. Fold in the flour 1 ladle at a time gradually until it finishes. For this process, use a spatula. Pour in the milk as you go along. Lastly add chopped walnuts to the cake mixture.
- Line a cake tin with some butter and place a baking sheet on it. For this recipe get a 8 inch square or 20 cm cake tin.
- Pour the banana cake mixture into the cake tin. Bake at 160 degrees celcius for 35 to 40 minutes depending on your oven.
- To test whether your cake is baked or not, do pierce it with a skewer. If the skewer comes out clean, then it means your cake is perfectly baked. If the skewer comes out wet, then bake further for another 5 minutes.
- Switch off your oven and take your cake out. It’s done!!

Here are some simple tips that you can follow to get excellent results.
- Always do use an electric beater to cream your butter, sugar and eggs.
- When folding your flour into the mixture, it is advisable to use one direction by hand, do not use a beater.
- Tap your cake tin at least 5 times before putting it in the oven. This helps to release any air bubbles that are trapped in the batter. This step encourages even baking too.
- NEVER EVER OPEN your oven while your cake is still baking.
- Slice your cake when it is completely cool at room temperature.
- If you wish to make banana muffins, you may use this same recipe.
- You may also place some chopped walnuts on top before baking.
