Fennel Prawns
Ingredients
- 25 prawns – peeled & deveined ( medium size prawns)
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 2 medium onions (sliced vertically)
- 2 teaspoon chilli powder
- 4 teaspoon coarse fennel (grind fennel seeds in dry grind)
- 4 sprigs curry leaves
- 4 tablespoons oil
- 2 cinnamon sticks
- 3 cloves
- 1/2 teaspoon salt
Method
2. In a pan, pour oil and keep your flame on medium heat. Put in cinnamon sticks, cloves and saute for 10 seconds. Once that’s done, then add curry leaves and saute for another 10 seconds.
3. Now add the sliced onions and cook for 1 minute. Add chilli powder and fennel powder to the onions and cook on slow flame for 3 to 4 minutes. Once the onions are soft and well coated with the spices, then add in the prawns and salt.
4. Mix the prawns well with the onions. Reduce the flame to low heat. Cover the pan with a lid for 3 minutes, so that the prawns will release water.
5. Open the lid now and dry the prawns further till there is no more water. All water must be dried from the prawns. This process is important. The prawns will taste good once all the liquid in them dries up.

- Use fennel seeds and grind them to a coarse powder for this recipe. Do not use fennel powder as you will not get the correct taste and texture.

- You can add an extra onion if you like your prawns with more onions.
- It takes only 15 to 20 minutes to prepare it. If you like your prawns spicy, you can adjust the spiciness of this dish by adding more chilli powder to it.
