Gula Merah agar-agar is a very old and traditional dessert. There are many types of agar-agar that we can enjoy in such a hot climate. This dessert is an all-time Malaysia’s favourite sweet dessert. Some people call it Gula Melaka agar-agar.

By cooking at one go, you will be able to produce 2 layers of this agar-agar. This agar-agar is very refreshing and superbly delicious. It has a beautiful pandan fragrance. You can make it for a special occasion or any time when you have the craving.

Gula Merah Agar-agar

Ingredients

10 grams agar-agar powder (1 packet)

950 ml water

180 grams brown sugar (gula merah)

2 pandan leaves knotted

¼ teaspoon salt

1 egg (beaten)

200 ml coconut milk (santan)

1 teaspoon pandan essence

Method

1. Take a cooking pot, put in water, agar-agar powder, brown sugar, salt and pandan leaves. Mix well and start the fire on a high flame. Cook the mixture for 5 minutes until the sugar is dissolved and the agar-agar comes to a boil.

2. Now mix coconut milk with 1 beaten egg well. Pour this into the pot and continue stirring at medium flame. Cook for 3 to 4 minutes until the mixture comes to a boil.

3. You must be able to see the santan separate from the gula merah. This is an indication that the agar-agar is ready.

4. Switch off the flame and add vanilla essence. Let the agar-agar cool for 5 minutes.

5. In a glass dish pour the agar-agar over it slowly. Let the agar-agar stand at room temperature for at least 30 minutes before refrigerating it.

6. Refrigerate the agar-agar for a minimum of 3 hours or overnight before cutting and serving it. Enjoy this simple and awesome dessert!

Final thoughts

1. If you have to prepare a dessert in a short time, the above recipe is recommended.

2. If you wish to add more sugar to the above agar-agar, you can do so by adding 20 grams more.

3. Besides using a glass dish for setting the agar-agar, you can use jelly molds, small serving bowls or dessert cups.
