Chinese Chicken and Potato Stew Recipe

What is a stew? A stew is a one-pot meal that is a combination of any meat with a few types of vegetables in it. The gravy is thicker than a soup.

When you feel you can only cook 1 dish for the day, this dish is to be considered. It is full of flavour and goodness.

Here is a simple Chinese Chicken and Potato Stew Recipe that is my family’s favourite.

Ingredients

  • ½ chicken weighing approximately 750 grams (cut into medium sized pieces)
  • 3 large potatoes (cut into ½ cm circles and soak in water with ½ teaspoon salt)
  • 4 pips garlic (grated)
  • 1 thumb size ginger (grated)
  • 3 medium onions (cut into ½ cm circles)
  • 2 medium red tomatoes (cut into ½ cm circles)
  • 2 tablespoons spring onions (cut into 1 inch length)
  • 2 tablespoons light soya sauce
  • 1 teaspoon thick and dark soya sauce
  • 2 tablespoons oil for cooking
  • 1 cup oil for frying potatoes and onions
  • ½ teaspoon sesame seed oil
  • ½ teaspoon white pepper
  • ⅓ chicken cube
  • 2 ½ cups water
  • 1 tablespoon corn flour (mixed with 6 tablespoons of water)

Method

  1. Take a wok, put 1 cup of oil on high heat. Now fry all the circled potatoes for 2 minutes. Keep aside. Fry all onions too for 15 to 20 seconds, then keep aside.

  1. Start by taking a cooking pot on a medium flame. Add oil, followed by grated garlic. Saute till the garlic becomes light brown in colour Add grated ginger and saute for 10 to 15 seconds.

  1. Add the chicken, followed by light soya sauce, dark soya sauce, maggi cube and white pepper. Saute for 2 to 3 minutes.

  1. Now add water and cook this chicken stew for 20 minutes on low heat.

  1. After 20 minutes, add the fried potatoes and onions. Cook for another 3 minutes.

  1. Now increase the flame and add the cornflour slurry. After 15 to 20 seconds, when the stew thickens, switch off the flame. Add sesame oil at this point.

  1. Do add the sliced tomatoes and spring onions. Cover your pot for 2 minutes until the tomatoes soften. Done!

  1. Enjoy your Chicken and Potato Stew while it is still hot!

Final thoughts:

  1. You may eat this stew with white jasmine rice.
  2. You may also add 4 dried shiitake mushrooms if you like them.
  3. Vegetables like cauliflower or carrots can be added to this stew
