Penang is famous for its hawker food. Char KoayTeow is one of the famous hawker foods that most tourists enjoy. Char means “stir-fried” and koay teow refers to flat rice noodles.

The common ingredients in a fried koay teow are prawns, cockerels, eggs, bean sprouts, chives and the flat noodle itself. You can make this tasty and easy fried koay teow at home. I make this noodle quite often for my family. Let’s start the recipe now!

Ingredients

  • 500 grams koay teow (flat noodles)
  • 1 tablespoon chopped garlic
  • 9 medium prawns (deveined and shelled)
  • 12 slices of fish cake (slice them into ½ cm slices)
  • 1 cup bean sprouts (125 grams)
  • 1 tablespoon chilli paste
  • 3 eggs & 1 teaspoon light soya sauce
  • 2 tablespoon chives (cut in 1-inch length)
  • 2 ½ tablespoon light soy sauces
  • 1 teaspoon dark soya sauce
  • ⅓ chicken cube
  • 3 tablespoon oil

Method

  1. Start with taking a wok and heating it on high flame. Add 2 tablespoons of oil. Now add garlic and saute it for 30 seconds.
  2. Add prawns and fish cake and chicken cube and stir fry for another 30 seconds.
  3. Add koay teow, chilli paste and both soy sauces and stir fry for 1 minute.
  4. Now add bean sprouts and stir fry for another minute.
  5. Push the koay teow aside in the work and add 1 tablespoon of oil. Now break 3 eggs, add 1 teaspoon of light soya sauce and scramble it for 15 seconds.
  6. Place the koay teow on top of the eggs and begin to stir fry for 1 more minute.
  7. Lastly, add chives and mix them evenly. Done!
  8. Your delicious fried koay teow is ready.

Final thoughts

  1. You may add chicken slices if you wish.
  2. You may also add vegetables like mustard leaves or cabbage if you desire.
  3. This noodle must be eaten hot.
  4. Use non-stick wok for better results.
  5. You don’t have to use a lot of oil as the koay teow is an oil by itself.
