Super 7 Ingredients to Almond Cake

Do you know that almonds are very good for us? Almonds contain lots of fibre, protein, magnesium and vitamin E. Some of the health benefits of eating almonds include lowering blood sugar, and reducing blood pressure and it helps to lower cholesterol levels too.

If you need to snack, almonds should be one of your healthy options. Nowadays, almonds are widely used in smoothies, pies, cookies, tarts and in desserts too. Here is a simple yet satisfying almond cake recipe.

Ingredients

  • 250 grams butter
  • 220 grams of castor sugar
  • 5 eggs
  • 240 grams of self-raising flour
  • ⅛ teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 50 grams almond nibs (divide into 2 portions – colour them red and green for a minimum of 8 hours)

Method

  1. Prepare almond nibs first, by colouring it 1 day ahead or for a minimum of 8 hours. Add 3 drops of red and green colour in 2 different containers respectively. Leave it to dry.
  2. Now take a bowl, put in butter and sugar and cream it with an electric beater for 3 minutes on medium speed, number 3.
  3. When you see the mixture is light and creamy in colour, then put in 1 egg at a time and continue beating till you finish all 5 eggs.
  4. Now add in vanilla essence.
  5. Add baking powder to the self-raising flour. Fold in the flour 1 ladle at a time gradually until you finish it all. Use a spatula for this process.
  6. Add the coloured almonds and mix them well.
  7. Get a square 8-inch baking tin and grease it with some butter. Now put a baking sheet on it.
  8. Pour the cake mixture into the cake tin. Bake at 160 degrees celsius for 30 to 35 minutes depending on your oven.
  9. Test your cake with a skewer, if it comes out clean, that means it is ready. Done!

Final thoughts

  1. Use an electric beater to cream your butter, sugar and eggs.
  2. Once you put in the almonds, mix well. Do not over mix it as there is a possibility that the colours from the almonds will come out.
  3. Make sure your almonds are well dried.
  4. Tap your cake tin 3 to 5 times before putting it in the oven. This helps to release any air bubbles that are trapped in the batter.
