
Spaghetti Aglio e olio is a traditional Italian pasta dish from Naples, Italy. It is a typical dish of Neapolitan cuisine and is widely popular. The reason being so because it is simple to prepare and the fact that it makes use of inexpensive, readily available ingredients.

Ingredients
- 1 packet of spaghetti (400 grams)
- 1 teaspoon oil & 1 teaspoon salt (for boiling the spaghetti)
- ½ cup water (from boiled spaghetti)
- 9 pips of garlic (thinly sliced)
- 1 medium white onion (finely chopped)
- 3 tablespoons fresh parsley (finely chopped)
- 1 teaspoon chilli flakes
- 1 teaspoon oregano
- 1 tablespoon oyster sauce
- 4 tablespoon parmesan cheese
- 1 tablespoon butter
- 1 teaspoon salt
- 1/3 cup olive oil
Method
- Boil the spaghetti as per instructions on the packet. When you put water in a pot, do remember to add salt and oil to it.
- Once the spaghetti is done, sieve it and put it aside.
- Now get a large non-stick pan, start by putting in olive oil. Then add butter and garlic and saute it for 2 to 3 minutes on low heat until it is slightly golden in colour.
- Add chopped onions, chilli flakes and oregano and saute it for another 30 seconds.
- Add the spaghetti, oyster sauce, salt, parsley and 1⁄2 cup of spaghetti water. Stir well until all ingredients are well combined.
- Cook for 2 more minutes and lastly top up with parmesan cheese just before you serve.

Final thoughts
- You should boil the spaghetti not too early, it should be 1 or 2 minutes before adding it to the pan.
- You may add sliced button mushrooms if you desire.
- For those who are vegetarian, you can omit the oyster sauce.
