Jane Lim, who is a full time baker working from home went on a keto diet just recently. However, with the Mid-Autumn festival approaching she found herself craving for mooncakes.

Unfortunately thanks to all the sugar and and carbohydrates, Jane was unable to satisfy her cravings. Instead of just giving up, she decided to create her own keto friendly ones.

Her cakes only have about 20% of the calories found in a normal mooncake. She uses almond flour, coconut flour, a little yam, and zero-calorie monk fruit sweeteners. This allows for the cakes to be low in carbohydrates.

So this coming Mid-Autumn Festival will you be on the hunt for interesting flavours or stick to the traditional ones we know?
