Delicious Penang Mee Goreng Mamak

We all love Mee Goreng Mamak, don’t we? Some mee goreng are very spicy, sweet or oily. Today I will share a recipe with you which is healthy and yet tasty. This recipe serves 4 people. Let’s start with the fritters first.

Ingredients for the fritters

  • 1 cup all-purpose flour
  • 1 medium fried onion
  • 1 tablespoon grated carrot
  • 1 tablespoon fine dried prawns (soaked in water for 5 minutes)
  • 2 tablespoon chopped chives
  • ½ teaspoon fine salt & ¼ teaspoon white pepper
  • ¼ teaspoon yeast
  • ¼ teaspoon baking powder
  • 1/8 teaspoon turmeric powder
  • 50 ml water
  • 1 cup oil for frying

Method

  1. First, take a bowl and put in the flour. Then add fine prawns, fried onions, carrots, and chives.
  2. Now add all the dry ingredients, which are turmeric powder, salt, pepper, yeast and baking powder.
  3. Combine the above ingredients with water a little at a time. Mix it until you have a thick batter-like consistency. The ingredients should stick to the flour.
  4. Let the mixture stand for a minimum of 30 minutes so that it will rise when you fry them later.
  5. Take a frying pan or wok, and heat up 1 cup of oil on a medium flame. Take 1 to 1.5 tablespoons of the mixture and drop it in the oil.
  6. Fry for 1 to 1.5 minutes until the fritters are golden brown. Once it cools down, slice it and keep it aside. These fritters will be added to the Mee Goreng.

Ingredients for the Mee Goreng Gravy

  • 5 pips garlic
  • 1 medium onion
  • ¼ cube shrimp paste (belacan)
  • 1/3 chicken cube
  • 1 medium red tomato
  • 4 dried chilli (soak in hot water & deseed it)
  • ¼ cup water

Method

Take a blender, put all the above ingredients and grind into a smooth paste. Then keep aside.

Mee Goreng Ingredients

  • 500 grams of fresh yellow noodles (wash in cold water and sieve)
  • 1 ½ cups beansprouts (take off the tail)
  • 1 beancurd (tau kuah) fried and sliced
  • 1 medium boiled potato (sliced)
  • 1 medium onion (sliced)
  • Fritters that have been fried and sliced
  • 2 eggs
  • 1 medium bunch mustard green (sawi) cut into 1 inch length
  • 2 tablespoons tomato sauce
  • 2 tablespoons light soya sauce, 1 tablespoon dark soya sauce
  • ¼ cup water
  • 4 tablespoon oil
  • 3 tablespoons fried onions, 4 lime wedges and 4 lettuce leaves that have been sliced

Method

  1. Take a wok and start it on a medium flame. Put oil and add sliced onion and saute for 20 seconds.
  2. Now add the blended mee goreng gravy ingredients and cook for 3 minutes.
  3. Once the rawness of the gravy has disappeared, put in the noodles and beansprouts and mustard green.
  4. Then add in the fritters, beancurd slices and potato slices. Mix well.
  5. Now add tomato sauce, light and dark soya sauce, ¼ cup of water and stir fry the noodles for 2 to 3 minutes.
  6. Push the noodles to one side of the wok, put 1 teaspoon of oil and break 2 eggs. Stir the eggs and then push back the noodles on the eggs.
  7. Fry the noodles for another minute and then switch off the flame. Done. Your Delicious Penang Mee Goreng Mamak is ready!
  8. Top up your noodles with fried onions, lime wedges and with some sliced lettuce leaves. Enjoy!

Final thoughts

  1. You can prepare the mee goreng gravy a day or 2 before you make it. This will help to save time.
  2. If you want your mee goreng spicier, you can add 2 more dried chillies to your blender when you grind.
  3. You can also add some prawns or sliced chicken to your mee goreng.
