Ingredients:

  • 450g large prawns, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 red chilli, chopped
  • 1 cup heavy cream or evaporated milk
  • 1/2 cup grated Parmesan cheese
  • Salt, sugar and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions:

Sauteing the Garlic and Prawns:

  1. Heat a large skillet or frying pan over medium heat.
  2. Add the butter to the skillet and let it melt.
  3. Once the butter has melted, add the minced garlic to the skillet. Cook the garlic for 1-2 minutes, stirring frequently, until fragrant but not browned.
  4. Add the prawns to the skillet in a single layer and season with salt and black pepper.
  5. Cook the prawns for 2-3 minutes on one side until they start to turn pink and opaque.
  6. Flip the prawns over and cook for an additional 2-3 minutes until fully cooked through.
  7. Remove the prawns from the skillet and set aside.

Creating the Creamy Garlic Sauce:

  1. In the same skillet, pour in the heavy cream/ evaporated milk and bring it to a simmer over medium heat.
  2. Add the grated Parmesan cheese and chopped red chili to the skillet.
  3. Add 1 tablespoon of sugar taste.
  4. Stir the sauce until the cheese has melted and the sauce has thickened slightly, about 3-4 minutes.

Combining the Prawns and Sauce:

  1. Return the cooked prawns to the skillet, along with any juices that may have accumulated.
  2. Stir the prawns to coat them evenly in the creamy garlic sauce.
  3. Cook for an additional 1-2 minutes until the prawns are heated through and the sauce has reached your desired consistency.

Serving and Garnishing:

Sprinkle chopped fresh parsley over the creamy butter garlic prawns before serving.
