Easy Pandan Butter Cake Recipe

Pandan has become a very popular ingredient in our daily cooking and baking activities. From pandan leaves, we can make pandan chiffon cake, pandan agar-agar, pandan kaya, cendol, pandan nasi lemak, pandan chicken and many more delicacies.

If you are a pandan lover, here is a simple and easy recipe of a Pandan Butter Cake that you can follow.

Ingredients

  • 200 grams butter
  • 160 grams of castor sugar
  • 4 eggs
  • 220 grams of self-raising flour
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • 100 grams thick coconut milk (santan)
  • 2 tablespoon pandan paste
  • 1 teaspoon vanilla essence
  • 1 teaspoon pandan essence

Method

  1. Cream butter and sugar and with an electric beater for 2 minutes on medium speed, number 3.
  2. Once this mixture is light and creamy, add 1 egg at a time and continue this process until you complete all 4 eggs. Use speed number 1 for this process.
  3. Now mix the santan with pandan paste and keep it aside. Sieve the self-raising flour, salt and baking powder together and keep it aside too.
  4. In your butter, sugar and egg mixture, fold in the flour 1 ladle at a time and alternate with the santan mixture too. Continue doing so until the flour and santan finishes. Use a spatula for this process.
  5. Now add in 1 teaspoon of vanilla and pandan essence.
  6. Line your cake tin with some butter and a non-stick baking paper. Use a square 7 or 8 inch baking tin.
  7. Preheat your oven for 10 minutes before baking. Bake at 160 degrees celsius for 30 to 35 minutes depending on your oven. Do check with a skewer if your cake is baked before taking it out. Done! There you go…your Pandan Butter Cake is ready!!

Final thoughts

  1. If you want to use fresh pandan leaves, you can use 10 pandan leaves and grind them with 30 ml of water. Sieve this and use the pandan juice.
  2. You may use coconut milk/santan from a small box. You do not need to buy fresh santan from the wet market.
  3. The pandan paste gives a good flavour and colour, but if you want a stronger colour, you can add 2 drops of green food colouring. Happy baking!
