Will butter tteok become the shio pan of 2026? Following our addiction with Japanese salt bread last year, a new bakery trend is here to sweep the nation. Introducing: butter tteok.
What is butter tteok?
Butter tteok has been hailed a viral Korean dessert, though it actually originates from a type of Chinese baked rice cake (niangao). Also known as Shanghai butter mochi, it is made from glutinous rice flour, milk, plenty of melted butter, eggs, and sugar. It is baked in molds that give it a crispy exterior and a chewy interior. It is brown on the outside and yellow on the inside.

What does butter tteok taste like?
There is something very familiar about butter tteok. For those who enjoy caneles, these are very close in texture. They are often seen as a hybrid between mochi and madeleine, and have a rich flavour. They are best enjoyed hot and fresh from the pan, as they can otherwise be quite oily to touch.
What flavours are there?
Butter tteok is traditionally enjoyed in its classic, original form, which is custardy with a buttery aftertaste. Some Bangkok bakeries add an extra spin, like kunafa pistachio at Hikari Cafe, or fun shapes at Butter Bear Cafe.

How much does butter tteok cost in Bangkok?
Butter tteok is commonly sold in a set of four pieces, priced between around THB 99 to THB 200.
