Ingredients

  • 4 slices mackerel fish/stingray (about 600 grams)
  • 4 ladies’ fingers (cut into 2)
  • 1 medium tomato (sliced into 8 pieces)
  • ½ torch ginger (thinly sliced)
  • 1 bunch Vietnamese coriander (daun kesum)
  • 2 sprigs of curry leaves
  • 1 cup water
  • ½ teaspoon turmeric powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 5 tablespoon oil

To blend

  • 6 dried red chilli – de-seed it (soaked in hot water)
  • 2 medium onions
  • 5 pips garlic
  • 1 thumb size ginger
  • 2 pieces of lemongrass (serai) take only the white part
  • ½ torch flower (bunga kantan)
  • 1 teaspoon heaped shrimp paste (belacan)
  • 2 tablespoon tamarind (soak in 1 cup of water)

Method

  1. Take a blender and grind all the blended ingredients into a smooth paste. Keep aside.
  2. Now take a pot, pour oil, then put in curry leaves. Once the leaves are transparent, then add the blended ingredients and turmeric powder.
  3. Cook this mixture for 3 to 4 minutes on medium flame until you see some oil floating on top.
  4. Now add 1 cup water, ladies fingers and daun kesum. Add sugar and salt too.
  5. Cook this gravy for another 2 minutes on high heat until it boils.
  6. Now add sliced tomato and slices of torch ginger. Cook for 1 minute.
  7. Finally, add fish slices and cook at medium heat for 3 more minutes.
  8. Done! Your Nyonya Style Asam Pedas Power Curry is ready! Do enjoy it with hot jasmine rice.

Final thoughts:

  1. If you wish to add brinjal slices, you may do so when you put in your ladies fingers.
  2. You may use other fish like black pomfret or sea bass too.
  3. You may add some sliced onions before putting in your blended ingredients.
