Burnt cheesecakes in KL shows no sign of slowing down. Once considered an unconventional twist on a familiar classic, the burnt cheesecake has become a staple on café menus across Kuala Lumpur, with each bakery offering its own take on the now-iconic charred exterior and molten centre. What began as a culinary mishap—when chefs accidentally overcooked their cheesecake—has turned into a celebrated innovation in baking. For once, a scorched surface is a good thing.

The Basque burnt cheesecake or simply the burnt cheesecake originated in San Sebastián in the Basque region of northern Spain. San Sebastián is a culinary hub, famous for its Michelin-starred eateries and innovative food. The cake was initially popularized by chef Santiago Rivera at La Viña, a tiny pintxos bar in the city. He had made a crustless, infinitely lightly undercooked cheesecake with an extremely dark-brown surface—achieved by baking the cake at an unusually high heat. It has gone far and wide since from Spanish shores, being embraced by amateur cooks and professional pastry chefs the world over.

A traditional burnt cheesecake has little to do with its American counterpart. There’s no biscuit base or sugar glaze in sight, only simple, creamy, cheesy indulgence. The middle is goey and creamy and slightly molten, the texture dissolving expertly on the tongue. The top caramelises to a soft bitterness that moderates the richness, and a stunning contrast of texture and flavour. It looks unusually straightforward, but it’s actually full of depth.

Beam may be your typical neighbourhood coffee jaunt with its own roaster and specialty coffee beans – deemed as the best coffee place in Bandar Sri Damansara by regular patrons.
