Egg tarts were originally based on the English custard tart recipes, innovated in the Guangzhou province of Southern China. At the time, wealthy English traders were looking for a taste of home and asked the Chinese bakers to make custard tarts. However, the bakers decided to use cheaper local ingredients like eggs, sugar, and milk to make them instead of custard powder.
What resulted was a more flaky crust consisting of pork lard and a silky sweet custard filling. This made the tarts edible by foreigners and locals alike. At first, the tarts looked like oval before transforming into the iconic flower shape after World War II. Eggs tarts grew in popularity in Hong Kong and became commonly sold in teahouses (dim sum restaurants), cafes, and bakeries.
