The highlight of Park Hyatt KL restaurants is Merdeka Grill, an innovative grill that redefines Kuala Lumpur fine dining. Led by Executive Chef Stig Drageide, whose Norwegian heritage influences much of the menu, the restaurant integrates traditional methods with creativity and bold flavors. 

The culinary journey begins with innovative starters such as Nordic Vendace Roe Red Onion, Crème Fraîche, Lemon, and Shokupan, a nod to Chef Stig’s Swedish origins. Signature mains are Cedar-wood Roasted Salmon with Caviar and Smoke Butter Sauce and the show-stopping Seven Days Dry-Aged Chateaubriand served tableside and accompanied by freshly grated wasabi, sherry vinegar jus, and a considerate selection of mustards. And for dessert, Penang Vanilla Ice Cream served with Oscietra Caviar offers a dramatic combination of flavors.

With 97 seats, a transparent kitchen, private rooms, and an intimate yet contemporary design, Merdeka Grill presents a luxurious setting for special occasions or corporate dinners. For those who want a taste of Malaysia’s multicultural cuisine, Park Lounge offers an all-day dining experience that is local at heart. Designed as a casual yet sophisticated space, it is ideal for breakfast, working lunches, and long afternoons. 

The menu revives old recipes with modern twists, such as Botok Ikan, a Sarawakian spiced mackerel steamed in banana leaf with coconut and wild leaves, and Udang Kara Nyonya Laksa, a luxurious version of the crowd favourite laksa with whole lobster. The Puff Pastry Lamb Biryani — spiced lamb shank served with mango chutney, dhal, and raita — stands out with its layers of flavour.

One of its highlights is afternoon tea, reimagined as a four-course affair of savoury bites and sweet delights. Served in a dainty dessert trolley featuring handcrafted sweets, vegan and vegetarian treats, and the signature Mille Feuille, sliced tableside for your pleasure. Paired with premium loose-leaf teas, including Park Hyatt KL’s exclusive Rooibos Hibiscus blend, and accompanied by live music, it is an indulgent ritual high above the city. 

Cacao Mixology & Chocolate

Rounding out the Park Hyatt KL dining scene is Cacao Mixology & Chocolate, where mixology and chocolate artistry meet. Beverage Manager Lee Wei Lung offers a cacao-centric menu following the bean to glass experience in an atmosphere with stacked seating, floor-to-ceiling windows, and calming bossa nova tunes. 

Signature cocktails such as the Cacao Nut Highball (a combination of Kelantan 70% Cacao Bitters, Ford’s Gin, and pandan coconut soda) and The Cacao Club (a robust mix of raspberry chocolate, whisky, and durian) demonstrate cacao’s unique combos. Alcohol-free variations such as the Kesum Cacao Spritz and Asamboi Cacao Virgroni are designed for partying responsibly without sacrificing flair. Guests can also indulge in Cacao Flights, the combination of good-quality spirits with homemade pralines, or sweets like The Cacao Bar and Kelantan 70% dark chocolate lavosh. The bar’s magnum opus? A 19kg house-made block of 70% dark chocolate, chiselled live for a fancy Instagram post.
