Wat tan hor is the ultimate Malaysian Chinese comfort food, known for its soothing texture and smoky wok hei. It is traditionally consists of flat rice noodles (hor fun), seafood, chicken or beef, and an opulent egg sauce. It is a popular dish among Chinese restaurants in Kuala Lumpur and Petaling Jaya. But which of them serves the best of the best? Here are our picks for the best wat tan hor in KL and PJ you can get today.

Its recipe has been passed down by each generation of Chinese-Malaysian cooks for a uniquely Malaysian taste. Wat tan refers to the egg’s soft, slippery texture (wat means “soft,” and tan means “egg” in Cantonese), while hor is a shortened version of hor fun, the wide flat noodles required in the dish. It is essentially a thicker, saucier version of char kuey teow.

The origins of the dish

Wat tan hor fun originated in late 19th and early 20th century with Cantonese immigrants in Malaysia. From the traditional Cantonese chau hor fun (stir-fried flat rice noodles), local cooks adapted the dish to include local flavor and ingredients.  After evolving over the years, the dish finally included a characteristic egg-drop gravy (which is more thicker and richer in flavor than in Hong Kong) which was usually garnished with local seafood, pork or chicken.

Whether wolfed down as a spontaneous weekday lunch or a indulgent midnight snack, wat tan hor is a fixture in kopitiams and Chinese restaurants in Kuala Lumpur and Petaling Jaya. But then there are those few places that raise it to another level by combining technique, wok hei, quality ingredients, and consistency.
