Normally you will hear the usage of corn in desserts and also in soups. Corn is rich in vitamin C, Vitamin B1, and also in Vitamin B5. These vitamins can help to fight constipation, cancer and heart disease.

You might not have heard of a corn cake. Today, I am going to share with you an easy and delicious creamy corn cake. All you need to do is to follow this recipe correctly.

Creamy Corn Cake Recipe

Ingredients

  • 220 grams butter
  • 200 grams castor sugar
  • 4 eggs
  • 250 grams self-raising flour
  • 4 tablespoons heaped sweet kernel corn
  • 30 ml full cream milk
  • 1 teaspoon vanilla essence
  • 1 pinch fine salt

Method

  1. Take a mixing bowl, put in butter and sugar and cream it with an electric beater for 2 minutes on medium speed, number 3.
  2. Once this mixture is light and creamy and the colour has lightened, put in 1 egg at a time and continue this process until you finish all 4 eggs. After every egg, do beat the mixture on speed number 1 lightly.
  3. Now add in 1 teaspoon of vanilla essence. Put in 4 tablespoons of sweet kernel corn.
  4. Now remember to sieve the self-raising flour with a pinch of salt. Add milk gradually and fold in the flour 1 ladle at a time slowly until it finishes. Use a spatula for this process.
  5. Line your cake tin with some butter and non-stick baking paper. Use a square 7 or 8-inch baking tin.
  6. Preheat your oven for 10 minutes before baking. Bake at 160 degrees Celcius for 35 to 40 minutes depending on your oven.
  7. Do tap your cake tin at least 3 to 4 times before putting it in the oven. Once your cake is baked, do test it with a skewer whether it comes out clean, if it is then it means it is ready. Switch off your oven and take your cake out. Done.

  1. Use an electric beater to cream your butter, sugar and eggs.
  2. When folding your flour into the mixture, do not use an electric beater.
  3. While the cake is baking, do not open your oven.
  4. The taste of this cake is very rich and creamy.
