Ayam masak merah is not an unknown recipe for Malaysians. This delicious yet tasty chicken is not only simple to prepare, but is also very flavourful.

Delightful Ayam Masak Merah Recipe

Ingredients

  • ½ chicken weighing approximately 750 grams (cut into medium sized pieces)
  • 3 fresh red chillies
  • 2 stalks lemongrass (serai – take only the white part)
  • 8 pips garlic
  • 3 medium sized onions
  • 1 large onion sliced horizontally
  • 1 thumb size ginger
  • 2 candlenuts (buah keras)
  • 2 medium tomatoes (red ones) – grind separately
  • ½ cup water for grinding
  • 1 cup water
  • 2 pandan leaves (cut into 4 inch length)
  • ½ teaspoon turmeric
  • 1 tablespoon dried chilli paste
  • 1 teaspoon chilli powder
  • 2 tablespoon tomato sauce
  • 6 tablespoons oil for cooking
  • 1 ½ cups oil for frying
  • 2 cinnamon sticks
  • 2 cardamoms
  • 3 cloves
  • 1 teaspoon fennel powder
  • 1 ½ teaspoon salt

Method

  1. Clean and wash your chicken. Marinate it with turmeric and ½ teaspoon of salt. Put aside for 20 minutes.
  2. Now take a wok and heat up your oil at a high flame and fry the chicken up to 70%. Keep it aside.
  3. Get a blender, put in garlic, onion and ginger, lemongrass, candlenuts, fresh chillies in it. Now add half a cup of water to it. Grind the above until it becomes a smooth paste.
  4. In a pot, pour oil, and keep your flame on high heat. Put in cinnamon sticks, cardamoms, cloves and pandan leaves. Saute for 10 seconds or until these crackle, then add 1 sliced onion and dried chilli paste. Cook for 1 minute.
  5. Now add the blended mixture and cook for 2 to 3 minutes. Once the oil appears, do add in the fried chicken. Mix well and add chilli powder and fennel powder. Reduce your heat to low flame now. Add 1 cup of water, grinded tomatoes, tomato sauce and salt.
  6. Cook the chicken for another 10 minutes so that all the spices are infused well. After that, switch off the flame. Done.
  7. Your delicious ayam masak merah is ready to be served. Enjoy!!!

Final thoughts:

  1. This ayam masak merah can be served with white rice, biryani rice, tomato rice, chapati and also with nasi minyak.
  2. You can add 2 tablespoons of chopped coriander or mint leaves, which is optional.
  3. If you wish to add potatoes, you can fry it when you fry the chicken.
