
There are many types of vegetables that we can combine to make mixed vegetables. This mixed vegetable that I am going to share is simple and yet very tasty. The spices are very minimal. If you are cooking nasi tomato, jeera rice or biryani, you should try to accompany your meal with this vegetable. Here are the ingredients and method:-

Ingredients
- 200 grams french beans (cut 1cm in length)
- 150 grams cauliflower (cut small florets)
- 1 medium sized carrot(cut thin half circles)
- 1 tablespoon chopped coriander leaves
- 4 pips garlic (grated)
- 1 teaspoon ginger (grated)
- 1 medium onion finely chopped
- 2 sprigs curry leaves
- ½ teaspoon cumin seeds
- ½ teaspoon mustard seeds
- 1 teaspoon fennel powder
- 1 teaspoon cumin powder
- ⅛ teaspoon turmeric powder
- ¼ teaspoon white pepper
- 3 tablespoons water
- 2 tablespoons oil
Method
- Heat up your frying pan on medium heat. Start with pouring in the oil. Put cumin and mustard seeds and let it crackle.
- Now add curry leaves and saute for 10 seconds.
- Add grated garlic and chopped onions and saute for half a minute until the onions are pink in colour.
- Add french beans, carrots and cauliflower. Now add the spices like cumin, fennel powder, turmeric, white pepper and salt.
- Mix well and add water. Cover this vegetable with a lid and turn the flame to low heat and cook for 5 minutes.
- After that, open the lid and check to see the vegetable is cooked. If there is some water, dry it further.
- Lastly, sprinkle with coriander leaves. Done! Enjoy your mixed vegetables.
Final thoughts
- This vegetable is dry and is suitable to serve when you are making dal or any curries.
- You may also add small broccoli florets and also sliced button mushrooms.
- If you wish to give an additional flavour, you can add ½ teaspoon of oyster sauce.
