The festive period is almost upon us, which means it’s time to feast. In Singapore, hotels and restaurants are gearing up for Christmas 2025 with decadent spreads featuring turkeys, roasts, and, of course, dessert. Along with log cakes and gingerbread that are always in the spotlight, panettone has also found a place on the festive table, even in Singapore.

Known for its tall, domed shape with a soft and fluffy interior, panettone’s history dates back to the 15th century in Milan, where it was originally made as a luxurious treat for special occasions. The preparation of this iconic Italian sweet bread is both an art and a science. It begins with rich dough that undergoes a slow and careful fermentation lasting several hours or days. The fermentation process is key to developing its signature airy texture and depth. After the initial rise, candied fruits, nuts and flavourings are folded in before being shaped into tall molds. A final proofing allows the bread to expand before it’s baked until golden.

Over the centuries, panettone has evolved from its simple beginnings to an artisanal delicacy, with bakeries around the world adding their own unique spin to the traditional bread. Despite these innovations, its core elements remain: a tender dough enriched with butter and eggs.

In Singapore, we see restaurants and bakeries increasingly adding this festive favorite to the spread. Fico

Fico’s chef Mirko Febbrile and pastry director Jeanette Ow have collaborated with Italian family-run artisanal pastry shop Olivieri 1882 to dream up a limited edition panettone for this festive season. The Festive Panettone (S$89++) captures the essence of Italian celebrations, featuring rich dark chocolate, candied orange and a touch of aged rum.

Available for pre-order now. Self-collection is available at both Fico and Somma Lab from November 24.

The Fullerton Hotel Singapore

Complete your festive spread with The Fullerton Hotels’ panettone. The Classic Panettone (from S$18++) is a signature, filled with festive spices, raisins, candied orange peel and lemon peel. The hotel has also introduced a Black Forest version. Available in two sizes (from S$18++), this decadent alternative reimagines the Italian dessert and comes studded with brandy-soaked cherries. Alice Boulangerie

Alice Boulangerie’s signature Christmas Panettone (S$58++) returns. The timeless Italian classic is made with white chocolate, candied lemon, orange peel and black raisins. Each loaf goes through a 12-hour fermentation process that results in a delicate crumb and an airy and cloud-like texture. The sweet treat is complete with a dusting of icing sugar.

Available for pre-order from now until December with collections available from November 21. Final orders must be placed by December 28 at 4pm.

If you’re one who enjoys figs and raisins, you’ll want to go for Pan Pacific Singapore’s latest Panettone Figs and Raisins (S$85). Da Paolo Gastronomia

Da Paolo’s panettone are leavened for 36 hours, resulting in a soft and fluffy sweet bread. Go for the Classico (from S$14.90++) that’s dotted with raisins and candied orange. Two sizes are available, 100g or 750g perfect for both intimate and large gatherings. If you’re not a fan of raisins and candied orange, go for the Pandora Classico (S$75++) instead, that’s made with fresh Italian butter and sourdough starter. Complete each slice with a dusting of powdered sugar.
