In the second episode, we speak to chef and owner of Province Singapore, Law Jia-Jun who focuses on the bountiful and beautiful Southeast Asian cuisine. Armoured by a strong passion for food since a very young age, the talented 30-year-old chef has it all planned since he was 12 – it was Jamie Oliver cooking pumpkin soup on TV that got him started.
“I grew up knowing that I wanted to cook since young,” he says. Two decades later, he has truly lived his dream. Cooking is also no longer a profession that’s frowned upon or about feeding people anymore. “As chefs, you have a bigger role in creating positive impacts to the environment and fostering a more sustainable lifestyle. Food is not just a canvas to relay messages. It’s a bridge between building a community and communicating with people in hope to build a like-minded ecosystem.”
His role as a chef has also changed from concocting dishes to mentoring and teaching. He finds fulfillment in passing down his knowledge and opines that the new generation of chefs today are more open to sharing and collaborating.
Also in this episode, which was shot in the 1-Bedroom Villa of Equarius Hotel at Resorts World Sentosa, he speaks about empowering the community beyond the four walls of his 10-seater restaurant in Joo Chiat. It’s no longer just about running the business anymore. Jia-Jun directs his attention to nurturing the community through food and storytelling – and it starts with his own team at Province.
