From 31 July to 9 August, diners will have the rare opportunity to savour Goikoetxea’s signature culinary style, which masterfully balances Basque heritage with cutting-edge technique. Revered for his ability to blend traditional flavours with contemporary artistry, Goikoetxea crafts dishes that are both visually striking and deeply rooted in Spain’s rich culinary landscape.

A protégé of the legendary Martín Berasategui — one of Spain’s most decorated chefs — Goikoetxea carries forward his mentor’s philosophy of preserving regional Spanish cuisine while infusing it with modern elegance and innovation.
Presented in collaboration with Cathay Pacific, this exclusive dining experience at Sabayon promises a meticulously curated seven-course tasting menu, offering a journey through land and sea, guided by Chef Xabi’s refined vision.

Goikoetxea’s stint at Sabayon will see the chef prepare items such as Comté cheese crunch | Smoked eel | “Anchoa del Cantábrico”, Salt-cured prawn | Sea tempura, Donostiarra Soup|Prawns | Cured egg yolk, Turbot |“Pil Pil” | Caviar and Roasted Sirloin Au jus | Date chutney.
A full vegetarian menu is also available.
