There’s something magical about tasting a city for the first time — how its flavours seem to speak a language older than words. In Makassar, I found that story told through spices, textures, and warmth that felt both foreign and familiar.
Rempah Bistro, tucked quietly inside TransMall Makassar, instantly drew me in with its understated elegance — a modern space that still hums with the heartbeat of tradition. I remember that afternoon clearly: the light filtering softly through the glass, the faint aroma of herbs and coconut milk in the air, and a sense of calm that made me slow down to truly taste.
I ordered two dishes that caught my curiosity, Nasi Cumi Hitam and Dendeng Balado. When they arrived, the presentation alone was poetry.
The Nasi Cumi Hitam came wrapped neatly in banana leaf, releasing a gentle, smoky fragrance as I opened it. The rice was warm and comforting, the squid ink sauce rich, bold, and deep like the ocean itself had lent its soul to the meal. There was something earthy about it, something that lingered beyond taste.
Then came the Dendeng Balado thin slices of beef, glistening under a blanket of sambal. The first bite delivered everything I love about Indonesian cuisine: fire, sweetness, aroma, balance. The chili kissed the tongue, the crispy edges of the beef added texture, and somehow, in that fiery simplicity, there was comfort.
As I sat there, I realised that food here isn’t just about satisfying hunger. It’s about connection to the sea, to the spice routes, to the generations who have passed recipes down with love. Makassar has a way of grounding you, reminding you that flavour can be both an adventure and a memory.
I snapped a photo before the first bite — a little moment to remember how beautiful it felt to just be there, tasting something real. That picture still reminds me of the warmth of the people, the rhythm of the city, and the calm joy of finding stories in every plate.
