The Bellevue Manila builds its new dining philosophy around the Filipino table

MANILA, Philippines — Some meals we remember for the food; others for who sat across the table.

It is a familiar thought in Filipino homes, where food has always been closely tied to family, welcome, and celebration. The Bellevue Manila, located in Alabang, Muntinlupa, is bringing that sentiment to its dining portfolio through a new F&B House Philosophy that connects Qsina, Phoenix Court, Pastry Corner, Vue Bar, and Johnny’s Steak & Grill.

The idea is simple: Every table tells a story: inherited, celebrated, savored, unwound, or earned.

Each word gives one restaurant its place. Qsina is about what is inherited. Phoenix Court celebrates moments. Pastry Corner is for pleasures to be savored. Vue Bar is where you unwind. Johnny’s Steak & Grill is for something earned.

Rather than defining each restaurant mainly by cuisine or menu, The Bellevue Manila is looking at something more personal: why people choose to sit down together in the first place.

“Food has always been an important part of how we welcome people at Bellevue. Our guests come to us for many reasons and we want each of our restaurants to feel right for those moments, while still carrying the warmth and familiarity people have come to expect from The Bellevue Manila,” said Patrick Chan, Managing Director, The Bellevue Manila.

Qsina. Ang Kusina ng Pamilya. Since its introduction in 2023, Qsina has drawn inspiration from the Filipino kusina — a warm, familiar space where meals are prepared and shared. Its live cooking stations were conceived to bring some of that home-kitchen character into the restaurant, while its menu brings together Filipino and Asian flavors across buffet and à la carte dining, anchored by signature dishes such as Crispy Chicken Kare-Kare, Cheesy Baked Bangus, and Egg Brûlée. As Qsina continues to evolve, the restaurant will explore ways to bring more stories of family, tradition and provenance into the dining experience — and the stories are meant to reach the table, too. Selected dishes can share where they came from, whose family made them, the region they belong to, or the occasion for which they were traditionally prepared.

Phoenix Court. Where good fortune is served. The restaurant builds on the rituals naturally associated with Chinese dining: round tables, shared plates, reunions and the ceremonial toast. Family milestones, anniversaries, business banquets and generational celebrations become as much a part of its identity as its Cantonese cuisine. Adding flavor to these shared moments are signature favorites such as Roasted Peking Duck, a timeless centerpiece for celebratory feasts; Deep-Fried Prawn Balls with Salted Egg Yolk, offering a satisfying crunch with rich, savory indulgence; and Adlai Salted Fish Fried Rice, a comforting take on a familiar classic.

Pastry Corner. A small joy, made properly. A morning coffee. An afternoon pastry. A box brought home as pasalubong. The focus is on craft and the pleasure of slowing down for something good. Coffee tastings, reading gatherings, music and other intimate events will also give the space a more social character beyond the traditional hotel pastry counter. At the heart of its appeal is an assortment of beloved pastries, led by its creamy ensaymadas, a perennial favorite savored among patrons and a delightful reminder that even the simplest indulgences can make an ordinary day feel special.

Vue Bar. Manila, from a better angle. The view, golden hour and conversation set the tone. Rather than chasing the energy of a high-volume nightspot, Vue Bar leans toward relaxed drinks, music and evenings that can unfold at their own pace. The experience is complemented by signature plates made for lingering conversations, including Gambas al Forno, bringing a savory touch to sunset gatherings, and Beef Salpicao, a satisfying favorite that pairs naturally with an evening of good company and expertly crafted drinks.

Just a few steps away, Johnny’s Steak & Grill (at Cellar XXII) is reserved for a different kind of occasion.

Johnny’s Steak & Grill. The reward, well earned. A promotion, a graduation, a deal closed or simply a week worth putting behind you — Johnny’s is built around the personal wins worth marking over a proper steak. Where Phoenix Court celebrates with the group, Johnny’s is more intimate: a dinner for two or a few people sharing in the moment. The occasion calls for something exceptional, from the Crab Cake, a refined opening to a memorable meal, to the commanding Tomahawk, a steakhouse centerpiece made for savoring and celebrating life’s well-earned victories.

One hotel with different reasons to gather. Together, the five restaurants give guests different reasons to return.

A homecoming can lead to Qsina. A family milestone belongs around Phoenix Court’s table. Pastry Corner takes care of the coffee breaks and pasalubong in between. Friends catching up over sunset head to Vue Bar. A personal win calls for Johnny’s.

Eunice Lodripas, the Group Vice President for Marketing Communications of The Bellevue Hotels & Resorts highlighted, “We wanted to move beyond defining our restaurants simply by cuisine or menu. Each one should have a clear reason for people to come back. The idea that every table tells a story gave us a natural way to look at the portfolio but all part of the same Bellevue experience”.

The restaurants are different, but the instinct behind them is familiar. In Filipino hospitality, food has rarely been just about food. When we welcome someone, celebrate someone, comfort someone, or simply want to spend time with them, we feed them.

At The Bellevue Manila, there is a table for each of those moments.
