🌟挞皮

黄油73g,糖粉60g,杏仁粉20g,可可粉20g,低筋面粉146g,全蛋液60g

1⃣️黄油室温软化,加入糖粉、杏仁粉、可可粉、面粉,混合成沙砾状

2⃣️加入全蛋液揉成光滑的面团,擀成2.5毫米厚度,送入冰箱冷冻30分钟

3⃣️取出切成长条和圆,吻合到模具中,送入冰箱冷冻2小时

4⃣️烤箱160度预热5分钟,取出冻好的挞皮,送入烤箱160度烤15分钟

5⃣️20g蛋黄液➕5g淡奶油➕2g可可粉混合均勻

6⃣️取出烤好的塔皮刷上蛋黃液,送入烤箱150度继续烤10分钟,烤好取出晾凉脱模

🌟巧克力甘纳许

淡奶油280g,蜂蜜47g,黑巧克力228g

1⃣️淡奶油➕蜂蜜倒入锅中煮开,倒入黑巧克力中,充分混合均匀(浓稠顺滑状)

🌟焦糖酱

淡奶油100g,细砂糖100g,清水1勺

1⃣️细砂糖倒入锅中,加1勺水小火加热融化,出焦糖色

2⃣️倒入淡奶油,不停搅拌至浓稠关火

3⃣️将焦糖酱倒入冷却好的挞皮中,送入冰箱冷藏5分钟,取出倒入巧克力酱,送入冰箱冷藏30分钟,取出撒上些许巧克力碎就可以开吃啦!!!
