Penang Style Fried Mee Suah

Mee Suah originated from Fujian, China. Mee Suah is really soft and nice to eat. Nowadays when you go to a hawker centre, you might not be able to find this noodle. Mee Suah is made from wheat flour and is known as wheat vermicelli. This recipe serves 4 people.

Ingredients

  • 150 grams mee suah noodles
  • 4 cloves garlic
  • 1 medium onion (thinly sliced)
  • 80 grams of chicken slices
  • 12 prawns (peeled & deveined)
  • 3 dried shiitake mushrooms (soak in hot water, for 15 minutes, then slice it)
  • 1 cup bean sprouts (take off the tails)
  • 3 eggs beaten (add 2 pinches of salt)
  • 1 stack mustard green (cut into 1.5 inches in length)
  • 2 tablespoons chopped spring onions
  • 1 teaspoon sesame oil
  • 2 cups oil for frying the mee suah
  • 4 tablespoons oil for cooking
  • For the sauce
  • ⅓ chicken cube
  • 2 tablespoon light soya sauce
  • 1 teaspoon dark soya sauce
  • ¼ teaspoon white pepper
  • ½ cup water

Method

  1. We need to prepare the mee suah first. Heat up oil in a wok on medium heat. Put in the mee suah then just turn once on the other side and take it out. It should be golden in colour.
  2. Now in hot boiling water, put the fried mee suah and let it become soft. This will take about 30 to 45 seconds. Don’t stir the noodles while they are boiling or else they will break. Sieve the noodles and keep them aside.
  3. Cook 3 eggs with 2 pinches of salt, then keep aside.
  4. Let’s start with the noodles now. In a wok, pour 4 tablespoons of oil, add garlic and onion and saute for 30 seconds.
  5. Now add chicken slices, prawns and sliced mushrooms. Saute for 1 minute.
  6. Add the eggs and mustard green vegetables. Mix well.
  7. Now add the mee suah and bean sprouts together. Put in the sauce and start frying the noodles for 2 minutes on medium heat.
  8. Finally, add spring onions and sesame oil and switch off the heat. There you go, your Penang Fried Mee Suah is ready. Eat the noodles while it is hot.

Final thoughts

  1. You may serve these noodles with sambal belacan.
  2. Instead of using mustard green, you may use sliced cabbage.
  3. You could add other vegetables like carrot juliennes too.
