Simple Pineapple Salad for Weight Watchers

Ingredients

  • 1 cup pineapple sliced (use sweet & fresh pineapple)
  • 1 medium onion (slice it vertically)
  • 1 medium red tomato (deseed it & cut into 12 slices)
  • ½ cucumber (slice into half circles)
  • ¼ red or green capsicum (cut into small cubes)
  • 2 large lettuce leaves (roughly tear them with your fingers)
  • 1 tablespoon coriander leaves (finely chopped)
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon roasted cumin powder

Method

  1. Take a large bowl and put in lettuce leaves, onion, cucumber, tomato, capsicum, lettuce leaves and coriander leaves. Mix all the vegetables well.
  2. Now add 1 cup of sliced pineapple. Add in lemon juice, salt and roasted cumin powder.
  3. Give it a good mix and place it in the refrigerator for 30 minutes before serving. Done!
  4. Enjoy your pineapple salad. You may serve this salad with sandwiches, tomato rice, fried chicken, biryanis, chapati or naan bread.
