Traditional Chinese Peanut Pancakes

Peanut pancakes bring back old memories. My mother used to buy it for only 20 cents in the 70s. Now these pancakes can cost you Rm 1.20 to Rm 1.50 per piece. Have you thought of making them at home?

Well, I have a simple recipe that I would like to share with you today. This recipe makes 6 peanut pancakes.

Batter Ingredients

  • 250 grams of all-purpose flour
  • ⅛ teaspoon salt
  • 3 tablespoon castor sugar
  • ½ teaspoon instant yeast
  • ½ teaspoon baking soda
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 ¾ cup of water
  • 1 teaspoon melted butter

Filling Ingredients

  • 12 tablespoons of roasted peanuts (that have been ground coarsely)
  • 6 tablespoon castor sugar
  • 6 tablespoon melted butter

Method

  1. Take a bowl and put all the batter ingredients together. Mix well with a hand whisk and let it stand for a minimum of 45 minutes.
  2. To prepare the pancakes, take a 6 to 7 inch frying pan. Pour a few drops of oil and wipe it with a kitchen towel. Your frying pan must be on low flame for making these pancakes.
  3. Mix the batter once more again before pouring ½ cup of the batter into the frying pan. Turn your pan clockwise until the batter is spread evenly. Now add 1 tablespoon of sugar on the pancake. Spread the sugar evenly.
  4. Close the lid and let it cook until you see the bubbles appearing. After 3 minutes, spread 2 tablespoons of the roasted peanuts and 1 tablespoon of melted butter on the pancake.
  5. Wait for 30 seconds and then fold the pancake. Check to see if it has become golden in colour. If it has, then lift it from the pan and cut it in the centre.
  6. There you go, your Peanut Pancake is ready. Eat it while it is hot! Enjoy.

Final thoughts

  1. If you want to get thinner pancakes, you may want to put less batter on the pan.
  2. Other than peanuts, you may also put 1 tablespoon of cream of corn on the pancakes.
  3. You may also add sliced bananas too.
