Quick Thai Pandan Chicken Starter

Pandan Chicken has been my favourite starter for a long time. This starter may sound difficult to prepare, but actually, it is not. When you need to serve a starter, you should consider making pandan chicken.

Here are the simple ingredients that you will need for this recipe.

Ingredients

  • 400 grams of chicken breast (cut into 1-inch cube)
  • 30 – 35 pandan leaves (wash well and dry them) & 35 toothpicks
  • 1 stalk lemongrass (serai) take the white part only – slice it before putting it in the blender
  • 6 cloves garlic
  • 1-inch ginger
  • 1 medium onion
  • 5 green birds eye chilli
  • ¼ cup water
  • ½ teaspoon brown sugar
  • 1.5 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • ¾ teaspoon salt
  • 1 teaspoon sesame oil
  • 1 teaspoon oyster sauce
  • 1 tablespoon cornflour
  • 2 cups oil for frying

Method

  1. Take a blender and put in lemongrass, garlic, ginger, onion and 5 birds eye chilli. Now add ¼ cups water and grind the above into a smooth paste.
  2. Now take a bowl, put in the cubed chicken pieces and add in the ground ingredients. Mix well.
  3. Add brown sugar, coriander powder, turmeric, salt, cornflour, sesame oil and oyster sauce. Mix well again. Leave it to marinate for a minimum of 2 hours.
  4. To assemble the pandan chicken, take 1 pandan leaf and leave 1 inch from the bottom and then place the chicken on the leaf. Now roll the leaf from the bottom continuously until you reach the top.
  5. Use a toothpick to prick through the chicken so that the leaf is intact. Make sure the folding does not open up. Done. Continue doing so until you finish all the folding.
  6. Take a wok and add 2 cups of oil. Heat your oil on medium flame, and fry all the pandan chicken. Fry in a few batches. Your Thai Pandan Chicken Starter is ready.

Final thoughts

  1. Fry 8 to 10 pandan chicken pieces at a time. You should fry for at least 3 to 4 minutes.
  2. If you want your chicken spicier, you may add ½ teaspoon of black pepper powder.
  3. Serve your chicken hot with chilli sauce.
